In developing countries, food production, processing, preparation, cooking and consumption may all be carried out by the same people. They are therefore familiar with the process as a whole and would not ignore the implications of change in one part of the whole chain for other parts. In developed countries, however, a high proportion of our food is now processed by a seemingly separate food industry. The proportion may amount to 70 or even 80%, depending on whether you count butchering as a kind of processing, for example.
