Changes in eating habits and consumer expectations of food will increase the use of food additives. This is the conclusion drawn from a survey of the American market by The Freedonia Group, Inc, entitled Food Additives: Threats and Opportunities. Analyst Luci Weisenbach concludes that food additives demand in the US will increase by nearly nine per cent per year by 1994 to $3.9 billion representing real growth of over five per cent annually.
