I have to confess that before reading The Oxford Book of Health Foods I was not entirely sure what health foods were. I knew, in theory, what I should do in order to eat healthily: five pieces of fruit and veg. each day; drink plenty of water; etc., etc. But as for what health foods were I was a little vague, the phrase suggesting tofu, Alfalfa sprouts, Soya beans, and the like. This, apparently, is not nearly the whole picture.
