But it is important to realise that large parts of the meat industry have moved out of the shop to a factory situation. In the factory, as compared with the shop, there is a need for employees with high skill levels in a narrow range of tasks. In other words skilled operatives rather than craftsmen are needed, particularly in modern slaughtering and processing systems.
