Bentleys Snack Cakes Ltd introduced Ulrick and Short's fat replacers Delyte5 and Delyte6 into over 40 different product lines within two weeks of the first order being placed. This rapid introduction was partly instigated as a response to the increasing pressure on food manufacturers to reduce fat and “clean up” product labels and the company's desire to increase market share.

After being given clear guidance from Ulrick and Short, Edwinstowe-based Bentleys found the Delyte products easy to incorporate into existing recipes and the customer has been thoroughly impressed with the tapioca-based fat replacement, which has not compromised on the tastes, quality or textures of its products .Not only can Delyte reduce fat content it also increases process tolerance through increased water binding and improves overall moistness and shelf-life of bakery products, which leads to less waste and an overall reduction in production costs.

Delyte5 and Delyte6, although processed in different ways are declared as the same product offering two distinct textures – one appropriate for using in cakes and the other, which is a finer grain, for products such as butter cream.

One of the most difficult products to reduce fat in is a flapjack due to the binding properties that the fat gives. However, Bentleys has reduced the fat content in its flapjacks by 25 per cent without changing the taste or consistency of the product by using Ulrick and Short's Delyte5.
